Notes Hopjes or Haagsche Hopjes are a type of Dutch candy that uses coffee and carmel. The candy was an idea of Baron Hendrik Hop (1723-1808). There are a few stories as to how he developed the idea. Some say a doctor ordered him to stop drinking coffee, and he susequently created a candy with that flavoring. Other stories state he left coffee with sugar on the stove and found the next morning it turned to a caramel.
